Fishy Chicken bread

This chicken bread may look pretty tricky to make, but trust me it is incredibly easy. My mum got this recipe from one of her very best friend. It’s perfect for tea parties and picnics or even good to put in your lunch box and it’s a delight for everyone big and small.

Combine everything together for the dough and use warm water to make the dough. Leave it to rise for half an hour to one hour.

Add tandoori masala to the
chicken and cook it until the chicken is tender. let it cool down for a while and cut the chicken into small pieces,
add shredded cheese and add baby spinach then preheat the oven to 200 degrees Celsius.

 

 

 

 

Roll the dough into an oval shape. Then put the tandoori chicken mixture in the middle of the dough. Put diagonal cuts on the dough on both sides of the chicken. (Take a look at the pictures for better understanding)
Place the strips of  dough on top of the chicken taking turns from left to right.
The end result should look like a fish. Glaze the chicken bread with slightly whipped egg to give it some shine. Sprinkle black poppy seeds or sesame seeds on top. Bake it in the oven for 15-20 minutes.

Ingredients:

Dough:

  • Plain white flour   2 cups
  • Powdered milk   4 table spoon
  • Tandaco dry yeast   1 sachet
  • Sugar   1 tea spoon
  • Salt   1 tea
    spoon
  • Egg   1
  • Oil   1/4 cup

Other ingredients:

  • Boneless thigh fillet or breast fillet   2-3 pieces
  • Shredded cheese   1/2 cup
  • Baby spinach leaves   1 cup (optional)
  • Shan chicken tandoori masala   2-3 table spoons (You can find it at Indian grocery store)
  • Egg   1
  • Sesame or poppy seeds to sprinkle (optional)

 

 

Peanut Butter Cookies

You can go nuts with these peanut butter cookies! They are yummy and addictive, and so so easy to make. You just need 3 ingredients.

Mix all the ingredients in a bowl. Line baking try with baking paper. Preheat the oven to 180ºC/356ºF. Take a teaspoon full of mixture in hands and form a small ball. Place ball on a baking tray. Use all the mixture to make balls. Use fork to slightly flatten the balls. Put them in oven for 8 to 10 minutes. Leave them to cool down before transferring them to serving plate or cookie jar.

  • 1 egg
  • 1 cup caster sugar

Fantastic Fajitas

These brilliant, but yet healthy meal are just what you’d need for a light lunch. The best part is that you can specifically customize it for your own taste buds. These fajitas are perfect for lunch boxes too!

Combine thinly sliced chicken with garlic,oregano, cumin, salt, crushed red chillies and a table spoon of olive oil. Leave it to marinate for half an hour.

Warm olive oil in a pan and fry onions. When onions are bit soft add capsicum and stir when needed. Remove onion and capsicum from pan once they are done. Fry marinated chicken in a pan. Once chicken is done, add onion and capsicum, mix and transfer in a serving dish.

Heat wraps on a pan or in oven. Serve chicken, wraps, diced avocado, corn, chopped green coriander, lettuce, sour cream  and shredded cheese all in different dishes.

  • 2 Chicken breasts (thinly sliced)
  • 1 Capsicum (thinly sliced)
  • 1 Onion (thinly sliced)
  • 1 can of corn
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 cup shredded lettuce
  • 1/2 cup chopped green coriander
  • 8 tortillas or wrap of your choice
  • 2 cloves of garlic crushed
  • 1 teaspoon of dry oregano
  • 1 teaspoon of cumin ground
  • 1 teaspoon of crushed red chillies (optional)
  • Olive oil to stir fry
  • Salt to taste

Fail-proof cupcakes

Everyone loves cupcakes. This tale takes you on a journey to create fantastic cupcakes. You can never go wrong with this recipe as the name says it all. They are easy to make and yummy to eat. Suitable for any occasion.

Preheat the oven to 200ºC/400ºF and line the cupcake tin with cupcake cases. Blend all ingredients  in a processor, except milk. Add milk at the end and blend again to make a smooth and creamy mixture. Add chocolate chips in a mixture and fold them using a wooden spoon or spatula.

Divide mixture among 12 cupcake cases. Bake for 15-20 minutes. Let them cool down and they are ready to be decorated. This is the fun part. Be creative, you can use fondant, royal or butter icing to decorate these cupcakes. My favourite is the cupcake bouquet!

  • 125gm self raising flours
  • 125gm sugar
  • 125gm butter (at room temperature)
  • 2 tablespoons milk
  • 1 teaspoon vanilla essence
  • 1/2 cup chocolate chips

 

 

Chicken Parcels

Imagine the excitement you feel while opening a present, is it a bird? Is it a plane? Or is it a chicken? It’s a Chicken! A chicken bursting with flavor that is!  Everybody likes wrapping, and especially opening presents, right? Well, this tale will take you on a journey full of flavors and the excitement of wrapping and opening parcels!

img-20161008-wa0029Marinate the chicken using all the ingredients below. Cut 5cm x 5cm pieces of aluminum foil. Put a heaped table spoon of marinated chicken in the center of the piece of foil. Then gently wrap the chicken like a small parcel. Deep fry the parcels for 4 to 5  minutes. Now your wonderful presents are ready to be opened!

  • Corn flour  1/2 tablespoon

Mouth watering Chocolate cake!

Last week it was my nano’s birthday, so we decided to throw her a surprise birthday party! We invited my cousins, my uncles, aunties and  my family was there, of course. We baked her a scrumptious chocolate cake, decorated like a knitting basket because she loves knitting and is very good at it. She always knits us wonderful stuff!

In a saucepan combine water, sugar, 20161007_182741butter, cocoa powder and baking soda. Put the saucepan on heat, simmer uncovered for five minutes.
Transfer mixture to a large bowl, let it cool to room temperature. Then add flour and eggs and beat until mixture is smooth. Put mixture in baking pan. Bake at 180 degrees Celsius. It will take around an hour to cook.

Let cake cool down over night and now it is ready for decoration. This yummy cake is good for any event. You can just put frosting on the top or decorate it with fondant if you like to.

Marhaba! to the Genie’s kitchen. Where you will explore the wonders of cooking. In each post there will be a new tale from our kitchen.

As I’m writing this down on the kitchen bench top, my mum is making gajar ka halwa (carrot halwa), So why don’t I share our carroty wonders with you today.

Put 1 kg of shredded carrots in a big pot with 2 liter of full cream milk and leave that to cook for about 1 hour until all the milk drys out, stirring occasionally. Leave a wooden spoon in the pot so that the milk doesn’t rise too high and spill out. carrot_halwa_3Once the milk is dry put ghee and 4 heaped table spoons of sugar and keep stirring so that the carrots doesn’t stick to the bottom of the pot. It will be done when it is all dry and you can’t even see one single drop of milk. You can also add nuts and any dry fruits, if you’d like to. Pistachios go really well with gajar ka halwa!

Enjoy it warm or you can turn it into a cold cake with or without layers of cream.carrot_halwa_1
